Chef Modou Diagne set to open new restaurant, TRUST, in Glasgow

Chef Modou Diagne, known for his success at 111 by Nico, is set to open his second Glasgow restaurant this summer. 


The new venture, named TRUST by Modou, will open its doors in early July, at 1132 Argyle Street, in Finnieston. 


There will be no set menu. Instead, diners will be treated to an ever-changing tasting ‘experience’ shaped by Modou and his team, celebrating seasonality, bold flavours and the power of storytelling through food. The five-course menu will be priced at £30 per person. 


Modou, originally from Senegal, came to Scotland on his own, when just 19, to seek work opportunities. After a year of applying for jobs with no success, he saw a job advert for a kitchen porter that chef Nico Simeone, of Six by Nico had posted online.


He applied immediately and was hired. Nico noted his work ethic and positive attitude and began to mentor him. Modou then rose through the ranks to become head chef. After that, Nico offered him the opportunity to establish his own restaurant brand, gifting him 111 by Nico, which was rebranded and opened as 111 by Modou, in 2020.


Commenting on the forthcoming launch of TRUST, Modou said: This is the restaurant I’ve always dreamed of. TRUST is about more than just great food – it’s about connection, surprise and giving people a reason to come back not just for a dish, but for a feeling. I want people to walk through the door and simply enjoy what we've cooked and prepared for them in that moment."
