Wine ‘takeover’ at Cardinal on 31 October

On Saturday 31 October, Cardinal restaurant on Eyre Place will welcome Vera Cebotari, sommelier and co-founder of Edinburgh wine merchant, Fion, for a one-night wine ‘takeover’. 


Chef Tomás Gormley’s fine-dining restaurant has featured Fìon’s low-intervention Spanish and Portuguese wines in its pairings and by-the-glass selection since launch.


For this special evening, Vera will take over the dining room to personally curate and pour a selection of her own picks alongside Cardinal’s tasting menu, which highlights Scottish produce. 


The dinner service runs from 5-8.30pm. Vera will be pairing wines with the restaurant’s tasting menu, which costs £89, excluding the cost of the wines.


The tasting menu on the night is likely to be similar to the current version, which includes dishes such as Hokkaido milk bun with cultured butter; turbot with flat beans, girolles and squash; and apple dulcey with chocolate and ginger.
