South Queensferry restaurant makes the finals of national awards
South Queensferry’s Crab & Lobster Fish Shack has made the finals, in the Field to Fryer category, as well as Top 10 Best Fish & Chip Restaurants category, in the National Fish & Chip Awards 2027.
It joins only two other Scottish businesses in the former category and is the only Scottish representative in the latter. All go through now to the grand final in London in February next year.
Commenting on the Field to Fryer listing, which celebrates chips, the restaurant’s owner, Bryan Coghill, said: “We’ve always been committed to producing chips which are as good as our fish, and now it’s official.
“We only ever fry with freshly prepared chips, prepared daily on the premises every day, with varieties that change seasonally throughout the year.”
“It's really good news to have reached the final in this category as well as overall best Fish & Chip Restaurant. These awards are the benchmark for excellence, and we always say that the chip is just as important as the fish.
“If a customer is coming in for fish and chips, they expect every element on their plate to be perfect, and that's what we aim to deliver every day.”
He added: “We’ve invested time in understanding the science behind producing the perfect chip. We’ve also made sure it becomes part of the customer experience. Our waiting staff let our customers know exactly what the variety of the potato is and where it was grown.”
“Every potato needs care and attention from the preparation and blanching, through to the final fry. We consistently only serve hot chips, crispy on the outside and fluffy in the inside, in every single portion, every single time. Why would you cook fish to order but not the chips? That makes no sense,” he concluded.
