Edinburgh sandwich specialists plan five new shops in 2026
Toscano, a family-run schiacciateria in Bruntsfield has announced that it is planning to open five more of its Italian-sandwich shops over the course of 2026.
The first of the five is due to open its doors on Blair Street, this spring, with the other locations to be revealed throughout the year.
Ilaria Pia, who co-owns Toscano with her mother, Luisa Pia, said: “Each location has been chosen for its energy, footfall and the kind of community that embraces big, authentic Italian sandwiches.
“We’re keeping the exact streets under wraps for now, but they’re all in central, high‑traffic areas that suit Toscano’s personality.”
The Bruntsfield store opened in March 2025, offering a range of sandwiches, including favourites such as ‘The Chianti’ (Parma ham, mozzarella, mid‑dried tomatoes and basil pesto).
Ilaria added: “Expanding Toscano feels like the natural next step after the incredible response we’ve had in Bruntsfield.
“When I started this business, I wanted to bring something truly authentic to Edinburgh – something big, something Italian, something real. The queues, the messages, the returning customers … they confirmed what we believed from the start.
“Opening five new locations this year is our way of giving even more people a taste of Tuscany, while staying true to the values we built this on: authenticity, quality and heart.
"Toscano has grown faster than I ever imagined, and I’m so grateful to be building it with my family by my side.”
