Pala, a new pop-up for the summer, serving Roman-style pizzas by the slice, has opened its doors at 7 Jane Street in Leith. 


Taking over the front of Twelve Triangles’ prep kitchen on Jane Street, Pala is a collaboration between Rachel Morgan and Emily Cuddeford, the co-founders of Twelve Triangles bakery, and pizza chef Alessio Dossena.


The team will be serving up pizza slices with toppings such as roast fennel and salami; potato, garlic and salsa verde; and aubergine, ricotta and tomato, as well as a selection of Italian soft drinks, and home-made tiramisu. 


Rachel said: “We wanted to make the most of our front-of-house space and create a fun, summer pop-up.” 


Pala is open for takeaway only, Thursday-Sunday evenings, from now until the end of the summer. Opening hours may vary.


Twelve Triangles opened its first shop in 2015 and now has seven in Edinburgh, and two in Melrose.  It was named one of the 20 best bakeries in the UK by the Financial Times, in 2023.
