Award-winning chef launches first cookbook

Award-winning chef and Great British Menu finalist Roberta Hall-McCarron has launched her first cookbook, The Changing Tides, for home cooks.


The book focuses on seasonal recipes, created with Scottish ingredients, based on dishes from Roberta’s three Edinburgh restaurants – The Little Chartroom, Eleanore and Ardfern. Each section also includes a set of dinner-party recipes and a cocktail.


The themes of the book reflect Roberta’s childhood memories of sailing around the Scottish coastline: seafood plays a central role, with dishes such as cod and Cullen skink; cured sea trout with apple; and mackerel with basil and smoked-almond sauce.  A selection of other recipes to try includes oysters with elderflower and cucumber; grouse and tattie scones; and gooseberry and Earl Grey swiss roll.


The Changing Tides costs £25.
