Maria Harper of the Edinburgh Canapé Company is running a cookery class designed to help create healthier eating habits.

It takes place on 18 May from 10am to 2.30pm, at the Cyrenians Flavour and Haver Cook School, on Jane Street.

The class focuses on beans and pulses and attendees will find out how to make Thai red- lentil soup, two ‘super’ salads, flatbreads and two dips (hummus and baba ganoush). They will also learn new ways to cook tofu and tempeh, involving curry and soya sauce. The salads on the menu include a squash and butter-bean salad and a tahini-dressed courgette salad.

Eight spaces are available, and the class is for all cooking abilities.  The cost to attend is £58 per person or £52.39 for ‘early birds’.

Maria said: “I'm very passionate about healthy eating and I believe it's important to help people create better eating habits.

“People might have the intention of eating better but they don't necessarily know how. My class provides lots of ideas and tips on how to cook using fresh and nutritious ingredients. Ultimately, my aim is to inspire a love of good food.”

She added: “There are well-being benefits from cooking because it involves creativity, and it can help to de-stress because it's a very mindful experience.

“Also, my class is a very relaxed and fun social occasion, allowing participants to meet new people in an informal way.”

The Edinburgh Canapé Company has three other events coming up – an empanadas class on 23 March, which will take place again on 31 August; a sushi class on 5 October; and a canapé class on 16 November.
